In the gastronomy industry, commercial kitchens, bakeries and confectioneries, a number of tasks are performed that place particular demands on the ventilation technology. In kitchens of all sizes, layouts and configurations, various different ingredients are cooked, steamed, roasted, fried, and grilled. In addition to steam, the resulting exhaust, namely kitchen fumes or waste vapours, also contains grease, various particles (e.g. dirt and soot) and escaped odours, which must be removed by the ventilation system. There is also waste heat from numerous different appliances, e.g. stoves and ovens, fridges, freezers, and dishwashers, which are often all operated at the same time in commercial kitchens.
