In the gastronomy industry, commercial kitchens, bakeries and confectioneries, a number of tasks are performed that place particular demands on the ventilation technology. In kitchens of all sizes, layouts and configurations, various different ingredients are cooked, steamed, roasted, fried, and grilled. In addition to steam, the resulting exhaust, namely kitchen fumes or waste vapours, also contains grease, various particles (e.g. dirt and soot) and escaped odours, which must be removed by the ventilation system. There is also waste heat from numerous different appliances, e.g. stoves and ovens, fridges, freezers, and dishwashers, which are often all operated at the same time in commercial kitchens.

This application also includes convection ovens and blast chillers that rely on the movement of air to operate, which means that the most efficient ventilation systems are key to an accurate, homogeneous result.

In local bakeries, commercial bakeries and confectionery workshops, many different processing and production processes also take place that require used or contaminated air to be extracted, and fresh, clean air to be supplied. Not only does the air have to be continuously renewed, but it must also be filtered and air conditioned if necessary, i.e. heated, cooled, or kept at the correct humidity level. In bakeries and confectioneries in particular, humidity and temperature are important factors in ensuring that dough, pastries, fine confectionery and decorations can be successfully made as planned and stay fresh.

We know what’s required from ventilation systems

Ventilation equipment in the catering industry not only needs to meet the strict requirements of food safety and hygiene, but the air-conditioning system also plays a significant role in ensuring comfortable and safe working conditions in kitchens, bakeries and workshops. ‘Five-star’ ventilation system for kitchens, bakeries and confectioneries

The ZAventero from ZIEHL-ABEGG is a particularly hygienic, powerful, robust and temperature-resistant centrifugal fan for the catering industry. It has been specially developed for extraction systems in kitchens, bakeries, the food industry, and in catering. Some of its many advantages include its simplified installation, temperature resistance up to 80°C, and edgeless design, which means that less dirt can collect. With the innovative ZAventero, only one pipe connection is required between the motor housing and the wall of the unit, as air is directed through the braces to the suction side.

Cleanliness is the top priority in kitchens. In particular when it comes to hygiene, fans in extraction systems are carefully checked by inspectors. All additional edges and hard-to-reach recesses increase the risk of dirt accumulating there. The reduced cleaning effort required saves time and staff costs, and extends the operating time of the fans.

For this reason, the centrifugal fan is fully enclosed, and the air flow from the motor cooling is diverted through the braces. This eliminates the need for a pipe from the EC motor on the rear to the suction side. The ZAventero can be easily installed thanks to plug-and-play design – only the pipe to the outer wall of the unit is required. And because no additional pipes impact the air flow efficiency , the new ZAventero is also more economical than similar products in terms of energy consumption.

The direct discharge of warm air from the EC motor increases the thermal resistance of this cube-shaped fan. Air can easily circulate up to a temperature of 80°C. This makes the ZAventero the perfect solution for kitchens and industrial applications that generate high temperatures, such as oil separators and drying systems. Together with the highly efficient EC motor, the housing with its smart air flow design provides a perfect solution for environments where hygiene and temperature resistance are important. The overall design with integrated air channels and a biomimetically designed fan also significantly reduces noise levels – which benefits all employees and guests.
